A cooling rack is a stationary or mobile unit with a series of wire shelves or slides designed to allow heat dissipation from a product.

  • Primary Purpose: To quickly remove heat and moisture from products like bread, cakes, and cookies.

  • Durable Construction: Typically built from all-welded, high-tensile extruded aluminum, which is lightweight and durable while offering excellent resistance to rust and corrosion.

  • Mobility: Equipped with 5-inch swivel casters (wheels) for easy transport, with some models including locking casters for stability during loading or unloading.

  • Pan Slides/Guides: Features angle runners or ribbed angle guides to hold sheet pans. The ribbed design helps pans slide on and off effortlessly, reducing wear and tear.

  • Configurations: Available in end-loading (pans slide in on the short side) and side-loading (pans slide in on the long side) options.

  • Pan Accommodation: Designed to hold standard $18'' \times 26''$ (full-size), $13'' \times 18''$, and $14'' \times 18''$ sheet pans.

  • Pan Capacity: Varies by rack height and runner spacing:

    • Full-Height Racks: Typically hold between 12 to 20 pans of size 18'' * 26''. Capacity can range up to 38 pans depending on the runner spacing.

    • Half-Height Racks: Can hold approximately 10 full-size pans.

  • Runner Spacing: The vertical distance between the pan slides/guides is commonly 3 inches or 5 inches, which allows for proper air circulation for cooling. 

  • Overall Dimensions (Full-Height Example): Heights are generally in the 67-inch to 72-inch range, with widths around 20 to 22 inches.
